Mexican Street Corn Recipe with Southwest Select Seasoning
Enjoy a delicious twist on corn on the cob with this easy recipe featuring grilled corn coated in a flavorful Southwest Select Seasoning, Mexican Crema, and fresh toppings. Perfect as a side dish for Taco Tuesday or any occasion!
Ingredients:
4 corn cobs, husks and silk removed
2-4 tablespoons Southwest Select
¼ cup mayonnaise
¼ teaspoon minced garlic
¼ cup Mexican Crema
Juice of 1/2 a lime
2 teaspoons chopped cilantro
Desired toppings (Cotija or queso fresco, cilantro, pickled onions, chives, pomegranate seeds, additional lime juice)
Instructions:
Prepare the Corn: If using a skillet, heat a dash of olive oil over medium heat. Cook the corn for about 3 minutes per side, turning to ensure all sides are cooked evenly. If using a grill, preheat it and place the corn directly on the grill, turning every 3 minutes until all sides are charred and cooked through.
Make the Sauce: In a small bowl, mix together the Mexican Crema, mayonnaise, minced garlic, Southwest Select Seasoning, lime juice, and chopped cilantro until well combined.
Assemble: Once the corn is cooked, remove it from the heat and plate it. Brush or spread the sauce mixture generously over the entire corn cob.
Add Toppings: Top the corn with your desired toppings: Cotija or queso fresco, additional cilantro, pickled onions, chives, pomegranate seeds, a sprinkle of Southwest Select, and a squeeze of fresh lime juice.
Serve: Enjoy this delicious Mexican Street Corn as an easy side dish for Taco Tuesdays or as a tasty appetizer for any occasion. Pair it with a crisp white wine like Sauvignon Blanc or Pinot Grigio for the perfect match!
Suggested Sides/Wine & Drink Parings:
Mexican Rice: Fluffy rice cooked with tomatoes, onions, garlic, and a blend of spices. This classic side dish complements the rich and tangy flavors of the corn.
Black Bean and Avocado Salad: A fresh and vibrant salad made with black beans, diced avocado, cherry tomatoes, red onions, cilantro, lime juice, and a touch of olive oil. It's light, refreshing, and adds a nice contrast to the creamy and spicy corn.
Grilled Vegetables: A medley of colorful bell peppers, zucchini, and red onions, lightly seasoned with olive oil, salt, and pepper, then grilled to perfection. The smoky flavor of the vegetables pairs beautifully with the charred corn.
Classic Margarita: A refreshing and tangy cocktail made with tequila, lime juice, triple sec, and a touch of agave syrup. Served on the rocks with a salted rim, it's the perfect drink to complement the smoky and creamy flavors of the corn.
Mexican Lager: A crisp and light Mexican lager, such as Corona, Pacifico, or Modelo. The refreshing and slightly citrusy notes of these beers balance the rich and savory flavors of the corn, making them an ideal pairing for a casual and flavorful meal.
Tips:
Char the Corn Evenly: Rotate the corn frequently on the grill or skillet to ensure even charring and caramelization of the natural sugars.
Mix the Sauce Ingredients Thoroughly: Blend the Mexican Crema, mayonnaise, minced garlic, Southwest Select Seasoning, lime juice, and chopped cilantro until smooth for a consistent flavor.
Add Toppings While Hot: Apply the sauce and toppings immediately after cooking to ensure they meld together and the cheese slightly melts.
