Mediterranean Citrus Pesto Pasta With Mediterranean Citrus Seasoning
Elevate your pasta night with this Mediterranean Citrus Pesto Pasta! A vibrant blend of spinach, basil, Pecorino-Romano, and our zesty Mediterranean Citrus seasoning creates a fresh, flavorful sauce. Tossed over spaghetti this quick & easy meal brings a burst of Mediterranean goodness to your kitchen!

Ingredients:
1 (16-ounce) package spaghetti
4 ounces Pecorino-Romano cheese, cut into cubes
6 cloves garlic
2 tablespoons Mediterranean Citrus seasoning
2 tablespoons olive oil
2 cups loosely packed baby spinach leaves
1 cup firmly packed basil leaves
½ cup chopped walnuts (optional)
¼ cup fresh lemon juice
Instructions:
Bring a large pot of lightly salted water to a boil. Cook spaghetti until al dente, about 12 minutes. Drain and transfer to a large bowl.
In a food processor, pulse the cubed Pecorino-Romano cheese until coarsely grated (about 30 seconds). Add the garlic and blend until combined.
Add the spinach, basil, lemon juice, Mediterranean Citrus seasoning, and walnuts (if using). Process until a thick paste forms, scraping down the sides as needed.
With the food processor running, slowly drizzle in the olive oil. Continue blending until the pesto is smooth and well combined.
Pour the Mediterranean Citrus pesto over the cooked spaghetti and toss until evenly coated.
For an extra depth of flavor, sprinkle of our sodium free Tuscany Reserve on top before serving.
Enjoy immediately, garnished with cheese of your choice, if desired.
Suggested Sides/Wine & Drink Parings:
Garlic Bread: A classic choice! Buttery, garlicky, and perfect for soaking up that flavorful pesto sauce.
Caprese Salad: Fresh tomatoes, mozzarella, and basil drizzled with balsamic glaze bring a refreshing balance to the dish.
Grilled Vegetables: A medley of grilled vegetables such as zucchini, bell peppers, eggplant, and asparagus. Lightly seasoned with olive oil and herbs, these veggies add a smoky depth that pairs perfectly with the citrusy pasta.
Pinot Grigio: This crisp, citrusy white wine complements the fresh basil and zesty Mediterranean flavors beautifully.
Limoncello Spritz: A bubbly, slightly sweet cocktail with limoncello, prosecco, and a splash of soda water to enhance the citrus-forward notes in the dish.
Tips:
Save Some Pasta Water: Before draining your pasta, reserve about ½ cup of the pasta water. If your pesto sauce is too thick, add a splash of the starchy water to help it coat the spaghetti smoothly.
Use Fresh Ingredients: For the best flavor, use fresh basil, spinach, and high-quality olive oil. Since this dish relies on simple, fresh ingredients, quality makes all the difference!
Toast the Walnuts (If Using): For a richer, nuttier flavor, lightly toast the walnuts in a dry pan for 2-3 minutes before adding them to the pesto. This step enhances their taste and texture.
