Ingredients:

  • Fresh garden salad mix

  • Fruit toppings of your choice (strawberries, blueberries, watermelon, etc.)

  • Feta cheese

  • 1 lb jumbo shrimp (fresh or frozen)

  • 2-4 tbsp Bayou Blend Seasoning

  • 3 tbsp olive oil or butter

  • 1 tbsp chopped cilantro

  • Raspberry or strawberry vinaigrette


Instructions:

  1. Prepare the Shrimp: Wash and devein 1 lb of shrimp. In a large bowl, toss the shrimp with 2-3 tbsp olive oil or melted butter, Bayou Blend Seasoning, and 1 tbsp chopped cilantro. Ensure all shrimp are evenly coated.

  2. Cook the Shrimp: Heat 1 tbsp olive oil in a large skillet over medium heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until the shrimp turn pink and are cooked through. Remove the shrimp from the skillet and let them cool slightly.

  3. Assemble the Salad: In a large salad bowl, combine the fresh garden greens, diced fruit, and crumbled feta cheese.

  4. Combine and Serve: Once the shrimp has cooled, add it to the salad. Drizzle with raspberry or strawberry vinaigrette to taste and toss gently to combine.
