Ingredients:
2 pounds freshly ground chuck (80% lean, also known as 80/20)
4-6 tablespoons Espresso Dry Rub
12 slices deli American cheese (or cheese of your choice)
6 large burger buns, toasted if desired

Instructions:
Prepare the Patties: In a large mixing bowl, combine the ground beef with the Espresso Dry Rub seasoning. Mix gently until well combined—avoid overmixing to keep the patties tender.
Shape the Patties: Divide the mixture into six portions and shape into patties, keeping them uniform in thickness. Smooth out any cracks with your fingers. Let the patties rest at room temperature while you preheat the grill or skillet.
Preheat and Cook: Preheat your grill, grill pan, or cast-iron skillet to high heat. If using a grill, cover with the lid. Place the patties on the grill or skillet.
Grill the Burgers: Cook the patties on one side for about 3-4 minutes, or until a light crust forms. Avoid flipping until this crust develops. When the patties lift easily, flip them and cook for another 2-3 minutes for medium to medium-well doneness. Add 1-2 slices of cheese to each patty, and turn off the heat, allowing the cheese to melt with the lid closed.
Rest and Assemble: Remove the patties from the heat and let them rest for a few minutes. Place them on toasted burger buns.
