Ingredients:

  • 1/3 cup honey

  • 3 tablespoons soy sauce

  • 2 tablespoons butter

  • 2 tablespoons citrus juice or dressing

  • 1 tablespoon minced garlic (or 4 cloves, crushed)

  • 1 tablespoon rice wine vinegar (or apple cider vinegar)

  • 2 teaspoons Sriracha (adjust to 4 teaspoons for extra spice)

  • 2 teaspoons sesame oil

  • 2-4 tablespoons Carolina BBQ seasoning

  • 1 tablespoon sesame seeds

  • Pinch of red chili flakes (optional)

  • 2-3 pounds wild-caught salmon fillet

  • Green onion slices, for garnish

  • Olive oil, for drizzling


Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with a large piece of foil, big enough to fold over and seal the salmon.

  2. Prepare the Salmon: Rinse the salmon fillet and pat dry with paper towels. Drizzle with olive oil and massage 2-4 tablespoons of Carolina BBQ seasoning into the fish.

  3. Make the Glaze: In a small saucepan, combine honey, soy sauce, and butter. Heat over medium heat until the honey and butter are melted and combined. Remove from heat and stir in citrus juice, garlic, vinegar, Sriracha, sesame oil, sesame seeds, and optional chili flakes. Set aside 1/4 cup of sauce for serving later.

  4. Apply the Glaze: Place the salmon on the prepared baking sheet. Pour the honey sesame glaze over the salmon and spread evenly with a spoon or spatula.

  5. Seal and Bake: Fold the foil over the salmon to completely seal the packet. Bake for 12-15 minutes, depending on the thickness of the salmon and your preferred level of doneness.

  6. Caramelize the Top: Carefully open the foil (watch for steam) and broil the salmon for 3-5 minutes, or until the top is caramelized. Watch closely to prevent burning.

  7. Serve: Pour the reserved sauce over the salmon and garnish with green onion slices before serving.
