BBQ Chicken Pizza Recipe with Carolina BBQ Seasoning

Ingredients:
Pizza Dough: (Makes enough for two 10-12 inch pizzas)
1 1/2 cups (355 ml) warm water (105°F-115°F)
1 package (2 1/4 teaspoons) active dry yeast
3 3/4 cups (490 g) bread flour
2 tablespoons extra virgin olive oil
2 teaspoons salt
1 teaspoon sugar
Pizza Toppings:
Extra virgin olive oil
Cornmeal (for easy transfer onto the pizza stone)
1/2 cup Sweet Baby Ray's BBQ sauce (or your favorite BBQ sauce)
2-4 tablespoons Carolina BBQ Seasoning
2 cups fresh shredded mozzarella cheese
2 cups pulled chicken breast
1/2 cup diced onion
1/2 cup diced pineapple
1/2 cup sliced mushrooms (or other toppings of your choice)
Fresh chopped basil for garnish
Instructions:
In a large bowl, dissolve the yeast and sugar in the warm water. Let it sit for 5 minutes until it becomes frothy.
Stir in the olive oil and salt. Gradually add the flour, one cup at a time, mixing until a soft dough forms.
Transfer the dough to a floured surface and knead until smooth and elastic, about 2-3 minutes. Place the dough in a greased bowl, turning once to coat the top. Cover and let rise in a warm place until doubled in size, about 45 minutes.
Preheat your oven to 400°F (200°C). If using a pizza stone, place it in the oven to heat.
Punch down the dough and divide it in half. Roll out each portion on a floured surface, then transfer to a greased pizza pan or pizza stone. Sprinkle cornmeal on the surface to prevent sticking.
